Curry

I didn't have many home-made batch-made meals left  in the freezer and ate the last box of curry last week so gathered up a lot of veg and a pack of quorn pieces, tins of coconut milk and korma paste and cooked up a nice big pan full.

Not sure of the total cost as the tins and korma paste had been in the cupboard a while but it's probably around £9.  Divided into 12 portions.

The hardest bit of making this was sorting the right  lids to match the freezer boxes!

  1. My freezer is suddenly emptied of prepared meals... need to start filling it again.

  2. I'm having a freezer cook up today too, we depleted it when we were ill. So satisfying to have meals ready to go. Your curry looks good.

  3. We had an unexpected family invasion last weekend (to see the new dog) and our cupboards and freezer were 'eaten to the back' so now I am operation fill it up again.

  4. That's a cauldron full ! It makes you feel good to batch cook and know you can just reach into the freezer for something tasty rather than having to start from scratch.

Isn't that the truth, I also find the glass one with clips always difficult to fasten but leftovers are always eaten over the next few days so must be stored.

  7. That looks delicious, I recently sorted out my plastic tubs and there were so many ill fitting lids - I think I inadvertently got rid of the wrong ones!

  8. I’m doing some batch cooking too . Good weather for it here . I’m glad it’s not just me who fights with the plastic boxes . I wrote letters of the alphabet to match box & lid but they do wash off after a while . I like your gentle blog & we love suffolk .

  9. Thank you everyone for comments above - must be the season for stocking the freezer. I need to do something else for variety and there's only one tomatoey pasta sauce left too.

  10. I love making a big pot like that and having leftovers to eat for several days. This cold weather is perfect for warming dishes like that.

  11. We've eaten down the outdoor freezer pretty well here too. I've enough prepped to not cook a few days. My son is still here with me until probably April/ May and he eats so much meal prep is for a few days at most.

  12. Agree with you about batch freezing. My go tos tend to be: chicken stew (very heavy on the veg, I got 12 portions out of 4 chicken thighs), lamb and aubergine Rogan Josh, again heavy on the veg, and chili. Whilst we eat meat of fish most days we eat very little meat
