2 tins coconut milk, 1 tin of plum tomatoes, 1 green pepper, 1½ onions, few small potatoes, ¾ pack mangetout. Most of the jar of Thai red curry paste and a pack of Basa fish fillets.
Sounds interesting but it won't be something I'd make here. Good to have the freezer full. I'm pulling out shepherds pie from the freezer tonight that I made a month or so ago. I keep a running list of what's in there and when I put it there. I imagine you do the same.
I love curry too. Both red and yellow curry sauce are great. Today, I've made a meatloaf. It will be two meals. Not as good as your seven but better than just one!
I cook Basa fillets at least once a week. I buy a pack of 5 or 6 fillets for $10 and keep it in the freezer. Usually I just fry the fillet in brown butter (yummy) and have potatoes and a green veg on the side but I think I might try to replicate your version for a change.
It looks good, it sounds good, but I have never been able to put "fish" and "curry" together in my mind. No idea why, I used to love a prawn curry when I ate meat and fish. Bon Appetite
An impressive batch cook there, and SO much cheaper than having "boughten" curry. Now that smoked haddock has reached the dizzy heights of £7.50 in Tesco, I will have to think of a cheaper option for my Kedgeree.
I love a Thai curry, and batch cooking is always good.
