A couple of weeks ago I used a Morrison's Red Thai Curry Kit (£2) to make a big pan of good looking vegetable curry to go in the freezer. The Kit has a sachet of curry paste, a sachet of coconut milk and a sachet of dried spices.
I used up various vegetables from the garden. Starting with 2 onions and two medium sized aubergines,
then a green pepper that had a hole in it, four red tomatoes - cutting off the blossom end rot bits and the last of the green beans. I cooked the beans in water in the microwave for a few minutes first.
It looked very good (better in real life than the photo!)and divided up into several portions which are in the freezer. They will make a change from my usual batch-made curries which I make using curry powder. I'm waiting for the butternut squash to be ready to do that.
Today I'm being brave and buying a new lap top - they will transfer some things from the old one onto the new. I shall be lap top less (hopefully not all weekend!). It will be good to have a keyboard with all the keys still there and a space bar that doesn't stick and to be able to do things that this old clogged up machine won't do because I'm "unsupported". Oh how I wish I knew more about computers.
I love those meal kits that provide all the spice/herb bits and let you choose the veg, etc.

My giant toms - Super Mama, the Sun Grape mini and the stripey Yellow Tiger Blush are all OK -thank goodness. It's the 2 plants of the San Marzano that are really badly affected. What a good thing I grow a variety

ReplyDeleteGood luck with the new laptop. I'm in the same position here. Mine is still sitting in it's box, though. This one is starting to behave badly and I'd rather swap before it gives up entirely. Those kits are a good way to try out something new.
ReplyDeletep.s. should add, it comes with MS Office free for 12 months, which includes a dictaphone, apparently, so will help with typing, I hope!

ReplyDeleteYou certainly know how to make the most of your garden produce! I was able to get some zucchini from my brother's garden and I made zucchini bread and zucchini soup and zucchini au gratin. All really delicious if I do say so myself!

A new computer - oh, exciting and yet terrifying too. I love technology actually; it has opened so many doors, but then I fear them closing... Try to enjoy it, for it will no doubt frustrate you too.

DeleteYour Red Thai curry looks excellent. Coconut milk makes a nice creamy sauce. I buy a jar of Red Thai curry sauce at Trader Joe's and add veg and/or stir fried chicken and I love it as well. (There is also a Yellow Thai curry sauce that I like too.) Your new laptop will be wonderful.
ReplyDeleteThere are so many ways to turn 'bits' not meals. Those curry kits are wonderful. So is a zip lock bag in the freezer. Just add bits of vegetables as they come along, and make a soup.
