Using Up Odd Bits of Vegetables

 A couple of weeks ago I used a Morrison's Red Thai Curry Kit (£2) to make a big pan of good looking vegetable curry to go in the freezer. The Kit has a sachet of curry paste, a sachet of coconut milk and a sachet of dried spices.


 I used up various vegetables from the garden. Starting with 2 onions and two medium sized aubergines,

then a green pepper that had a hole in it, four red tomatoes - cutting off the blossom end rot bits and the last of the green beans. I cooked the beans in water in the microwave for a few minutes first.

It looked very good (better in real life than the photo!)and divided up into several portions which are in the freezer. They will make a change from my usual batch-made curries which I make using curry powder. I'm waiting for the butternut squash to be ready to do that.

Today I'm being brave and buying a new lap top - they will transfer some things from the old one onto the new. I shall be lap top less  (hopefully not all weekend!). It will be good to have a keyboard with all the keys still there and a space bar that doesn't stick and to be able to do things that this old clogged up machine won't do because I'm "unsupported". Oh how I wish I knew more about computers.

I've got another busy week coming up so I shall be back sometime but I know not when! Apologies in advance for not commenting anywhere or replying to comments here.

  1. I love those meal kits that provide all the spice/herb bits and let you choose the veg, etc.

    So you have blossom end rot too - it's irritating, isn't it? I suppose we can be glad it isn't blight!!

    Good luck with the laptop and I hope getting everything transferred across, etc, goes easily and smoothly. You will really appreciate the ease of use, I am sure. xx

    1. My giant toms - Super Mama, the Sun Grape mini and the stripey Yellow Tiger Blush are all OK -thank goodness. It's the 2 plants of the San Marzano that are really badly affected. What a good thing I grow a variety
      Having a new lap top is very frightening!!

    Good luck with the new computer, I am hopeless with technology and just shout for one of the girls when I have a problem!

  3. The curry looks sooooo good and I must try one of the kits when I do my next order. I finally bought a new phone about 2 months ago and managed to transfer everything over that I wanted-phew! Take your time with the setting up and all will be well🤞🏻Catriona

  4. Good luck with the new laptop. I'm in the same position here. Mine is still sitting in it's box, though. This one is starting to behave badly and I'd rather swap before it gives up entirely. Those kits are a good way to try out something new.

    1. p.s. should add, it comes with MS Office free for 12 months, which includes a dictaphone, apparently, so will help with typing, I hope!

  8. You certainly know how to make the most of your garden produce! I was able to get some zucchini from my brother's garden and I made zucchini bread and zucchini soup and zucchini au gratin. All really delicious if I do say so myself!

  10. The curry kit looks to be good value for using up the bits which accumulate in the fridge bottom.

  11. A new computer - oh, exciting and yet terrifying too. I love technology actually; it has opened so many doors, but then I fear them closing... Try to enjoy it, for it will no doubt frustrate you too.

  12. I love the sauces that you add a small amount of meat to and then all the different bits and bobs of veggies. They always seem to come out very tasty.

  16. Your Red Thai curry looks excellent. Coconut milk makes a nice creamy sauce. I buy a jar of Red Thai curry sauce at Trader Joe's and add veg and/or stir fried chicken and I love it as well. (There is also a Yellow Thai curry sauce that I like too.) Your new laptop will be wonderful.

  17. There are so many ways to turn 'bits' not meals. Those curry kits are wonderful. So is a zip lock bag in the freezer. Just add bits of vegetables as they come along, and make a soup.

  18. Looks lovely. Hope the new laptop works well. I've found it really easy to transfer things over. When I got this one (used from Jane's house) I barely had to do anything - everything transferred over so easily.

  19. Good luck with your new laptop, it's so much easier to change over these days and you will get used to it quickly honest you will. I dreaded changing last time but it was the easiest change ever.

    Only now I've forgotten how to work my bloody tablet!!

  20. I have a new lap top I have had for sometime and I still clunk along on the old one everything is a new learning curve.
