Red Onion "Marmalade"..................

...............................AKA Sweet Onion Chutney.

Made a nice big batch of this a couple of weeks ago and avoided too many tears by peeling the onions under water and using the thin slicing blade on the food processor.

This is the most unusual chutney I make, goes well with cheese or burgers. Some is for us and some for the hampers again but I should have used red wine vinegar instead of white to make it a darker colour as it was a bit pale but only thought of it when I was getting everything ready and had no intention of driving miles just for a chutney!

  1. Not so long ago I had a lovely starter in a restaurant - small toasts with red onion marmalade and goat's cheese - delicious - try it.

  6. Red onion chutney/marmalade always goes down well here, my last jar has being used and I have had a request for some more so I had better make some soon.

    1. It's simple to make using the food processor - wouldn't want to slice them by hand!

  7. I like a recipe that uses balsamic vinegar and red wine vinegar. Itnis amazing how the onions reduce. An aldi bag of red onions make just over one jar...lovely stuff though. Have made six jars this week.

  9. I made carrot marmalade this summer with a couple of oranges and carrots that were past their best. Haven't tried it yet but it does resemble marmalade!

  11. As I seem to be powered by veggie burgers and bean burgers lately, this recipe looks like a winner to me! I LOVE any kind of preserve involving lots of onions, so I will take a look at your recipe. It's about time I dusted off my preserving pan...
