Chilli Jelly

There are so few cooking apples on my tree this year that the bruised windfalls are even more precious. I thought the best way to use them would be for the chilli jelly, because only the juice would be needed. So a couple of weeks ago I picked up all I could find cut all the manky bits and was left with just over 2lb of decent  chopped bits to which I added a pint of white vinegar and a pint of water and a few chopped chillies. Cooked this altogether for about 30 minutes and then strained through the jelly bag for several hours.

I ended up with 1½ pints juice. I heated this gently while adding the equivalent amount of sugar then added some chopped chillies and brought to boil.

Test for setting on a cold plate. Pour into hot jars and seal.

The things that went wrong were -
The juice wasn't as clear as I expected
 Some scum formed that I couldn't clear even by adding a bit of butter, which works for jam
The bits of chilli rose to the top of the jelly in the jars.

I know it's hot as I tried some - Phew - Very Hot.





I think a couple of jars are good enough to give away in the Christmas hampers, and eldest daughter wanted some too.

    1. I'm not sure what Eldest daughter wanted it for. I suppose you can add it to anything to give a bit of heat.

  2. I have not got any apples in my garden this year worth worrying about. The damsons are a different story I have hundreds I will asked at WI if anybody would like to have some tonight. We had a nice drop of rain in the night.

  3. I make chilli jelly and chilli jam all the time. Add it to mayo for a super dip or thinned down for a dressing.

  4. Looks great to me. There is a cafe in Castle Douglas (Scotland) who make their own chilli jam and always serve it with the salads with a few corn crisps. It is very nice and not too hot for me.
    Our apple tree has not produced much that we can see this year but we just thought it was because we had not been there to get the widfalls before the wildlife - but maybe there just hasn't been as many - last year was a bumper crop.

  6. Looks nice, a lovely colour. I didn't think we had as many apples this year, but it appears we have - the trees are thicker this year so the apples are hiding amongst the leaves.

  7. Sounds interesting but I find even a little heat too much. Husband is always laughing at me as I ask if something is hot and he says no but when I taste it my mouth feels on fire!
